Take some large tiger prawns, the fat juicy ones, that look promising. Add a few cloves of sliced garlic, a chopped chilli and some extra virgin olive oil. Fry in a good pan until cooked. Appreciate the aroma as you do so.
Purloin a red capsicum, slice it thinly a la julienne and sweat it off in extra virgin olive oil for about 15 mins, and then add a diced red onion and cook until unctuous.
Some haloumi cheese sliced and grilled untill brown is lovely as an addition. Go buy (or better yet bake your own) some artisan bread to mop up all the delectable juices that seep invitingly from the cooked delights that you will shortly be plating up.
Find yourself a good Verdelho and sup intently while you study the form, texture and taste of the fresh ingredients before you. Life is good when you take the time to enjoy it.
Enjoy,
kind regards,
J
