Good food is my passion. That means fresh and local. It also means traditional, along with the innovative, but mostly it means food for health and wellbeing.
Enjoy life and all it offers, for the alternative is not worth considering…

I’m obsessed with food. I think about it almost all my waking hours. The most exciting thing in the world for me is shopping for the best fresh, seasonal produce and taking it home and turning it into some delectable and glorious delight. I fantasize about the oohs and the aahs and the silent eyes shut moments of those first bites. Food porn in all its glory.

I take orders from friends as to what they would like to eat next time they come around. This is often the most satisfying for me, cook what you know they will like, then give them a little something they weren’t expecting, just because you can. Usually it’s something labour intensive from the mother country like steak and kidney pudding or some comfort food from childhood like rice pudding or plum crumble with lashings of home-made custard. Serve an amuse bouche of smoked salmon, apple, fennel and cucumber matchsticks on a chinese spoon with a light drizzle of white balsalmic and a teaspoon of black caviar on top.

 Summer is often fresh crawfish out of the dam with my home-made wasabi mayo, or chilli mussels and fresh bread, or tapas style garlic chorizo scallops/prawns on a bed of rocket, pan seared Barramundi with brown butter and lemon pepper sauce…the beer and the wine flow freely as the food inevitably disappears and the sun sets over the hill into the Indian Ocean under Capricorn. Bliss.

Your endeavor too has had a long preparation, during which you have compiled a great body of knowledge to accompany your talent and taste.
